Transport post processing

Special consideration is given to interfaces, which are found in most chill chains since they normally are discrete, i.e. made up of different transport modes.  In this chapter, advice is given on transport by air, road and sea, separately. More information can also be seen in this report on chilling protocols for fresh fish.

Product shelf life depends much upon the product temperature during transport and storage. The temperature profile during transport and export to foreign markets is therefore an important factor to consider.
