Raw material age

Generally, the more fresh raw material (time from catch/slaughter) with optimal handling and storage, the longer shelf life can be obtained measured from processing. Also, delaying processing will reduce the raw material freshness (for further information see here). These factors should be carefully considered during the selection of raw material for processing of fresh products, especially if the time to market is relatively long, such as exported products.

If raw material of different age is to be processed within the same day, it is crucial to first process the freshest or newest raw material to minimise cross-contamination, given that the handling and cooling has been according to good manufacturing practices.
