The effect of fishing ground on quality


Choice of fishing ground can have a direct effect on the raw material quality since considerable variability can be between different fishing grounds like temperature, gaping of muscle, number of worms, fillet yield, head/body proportion etc. In recent years, effort has been made to map fishing grounds around Iceland with regard to these quality factors as can been seen here. In continuation of this mapping, a software has been developed, FisHmark, which is intended to assist on decision-making within the fishing industry companies.
